- Prep the zucchini: Grate the zucchinis and place them in a clean kitchen towel/paper towel or cheese cloth. Press firmly to squeeze out as much moisture as possible — this helps the fritters get crispy.
- Mix the batter: In a large bowl, combine the grated zucchini, eggs, parmesan cheese, flour, and seasonings. Stir until well mixed.
- Form the fritters: Scoop about 2 tablespoons of the mixture and form into small patties or bite-sized rounds.
Cook them up:
- Air fryer method: Lightly spray your air fryer basket with oil. Arrange the fritters in a single layer and air fry at 400°F (200°C) for 12–15 minutes, flipping halfway through until golden brown.
- Stovetop method: Heat a bit of avocado oil in a non-stick pan over medium heat. Fry fritters for 2–3 minutes per side until crispy and golden.
- Serve and enjoy: Serve warm with your favourite dipping sauce — think Greek yogurt dip, marinara, or a creamy garlic aioli.
