Air fryer Zucchini Fritters

If you’ve got a few extra zucchinis on hand, these crispy zucchini fritters are the perfect way to use them up! They’re easy to make, packed with flavour, and a fun veggie-forward snack or side dish the whole family will love.

Ingredients
  

  • 4 medium zucchinis grated and pressed to remove excess water
  • 2 eggs
  • 1 cup grated Parmesan cheese
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 cup whole wheat flour or white flour

Equipment

  • Mixing bowl
  • Mixing spoon
  • Measuring cups and spoons
  • Cloth, paper towl or cheese cloth for removing excess liquid
  • Air fryer

Method
 

  1. Prep the zucchini: Grate the zucchinis and place them in a clean kitchen towel/paper towel or cheese cloth. Press firmly to squeeze out as much moisture as possible — this helps the fritters get crispy.
  2. Mix the batter: In a large bowl, combine the grated zucchini, eggs, parmesan cheese, flour, and seasonings. Stir until well mixed.
  3. Form the fritters: Scoop about 2 tablespoons of the mixture and form into small patties or bite-sized rounds.
Cook them up:
  1. Air fryer method: Lightly spray your air fryer basket with oil. Arrange the fritters in a single layer and air fry at 400°F (200°C) for 12–15 minutes, flipping halfway through until golden brown.
  2. Stovetop method: Heat a bit of avocado oil in a non-stick pan over medium heat. Fry fritters for 2–3 minutes per side until crispy and golden.
  3. Serve and enjoy: Serve warm with your favourite dipping sauce — think Greek yogurt dip, marinara, or a creamy garlic aioli.
