Sausage Pasta

This sausage pasta is hearty, full of flavour, and comes together in under 30 minutes. You’ll only need a handful of pantry staples and your favourite sausage to whip it up.

I also love adding a boost of greens with some quick microwaved spinach an easy way to level up the nutrition without much effort.

Ingredient Highlights

Sausage - Choose your favourite kind: mild, spicy, turkey, chicken, or plant-based. Sausage adds big flavour without needing a long list of extra seasonings. I used spicy sausage! 

Pasta - Use any pasta shape you love: penne, rigatoni, fusilli. You can also swap in whole grain or legume-based pasta for extra fibre and protein. I used rigatoni! 

Jarred Tomato Sauce Any tomato-based pasta sauce works here. I used a homemade jar of sauce my family made last summer! 

Spinach (optional) - A quick microwave with water softens fresh spinach so you can stir it in at the end. It’s an easy way to sneak in more leafy greens.

Ingredients

  • 1 package of your favourite sausage (about 4–5 links or 300–400g)
  • 1 jar (about 650–700mL) of tomato pasta sauce
  • 1 box of pasta
  • 2 handfuls fresh spinach (optional)
  • Water for boiling pasta and microwaving spinach
  • Cheese (optional - topping)
  • Fresh herbs (optional - to garnish)

Instructions

  1. Cook the Sausage: Remove sausage from casing (if needed) and crumble into a skillet over medium heat. Cook until browned and fully cooked through (no pink remains), about 7–10 minutes.
  2. Add the Sauce: Pour your jar of tomato sauce into the pan with the cooked sausage. Let it simmer together for about 5–10 minutes so the flavours meld.
  3. Boil the Pasta: In a separate pot, cook pasta according to package instructions.
  4. Microwave Spinach (Optional): Place spinach in a microwave-safe bowl with a splash of water. Microwave for 1–2 minutes until wilted, then drain any excess water.
  5. Assemble: Toss cooked pasta with the sausage sauce.Stir in the microwaved spinach. Serve hot with grated cheese or fresh herbs if you like.

Storage

Store leftovers in an airtight container in the fridge for up to 5 days. Reheat in the microwave or on the stove with a splash of water or extra sauce.

Tips

  • Want it creamier? Add a splash of cream or a spoonful of ricotta.
  • Add veggies like mushrooms, zucchini, or bell peppers for extra fibre.

  • Gluten-free: Use GF pasta.
  • Dairy-free: Skip cheese or use a dairy-free alternative.
  • Meatless: Use plant-based sausage or lentils.

Can I use frozen spinach instead of fresh?

Yes! Just thaw and drain it well before adding.

What sausage works best?

Any kind! Pork, turkey, chicken, or veggie sausages all work—go with what you like.

How do I keep the sauce from getting too thick?

Use a splash of reserved pasta water to loosen it up before serving.
