Peanut Butter Rice Treats

For all the peanut butter lovers out there!

If you’re a fan of peanut butter (and let’s be real, who isn’t?), these No-Bake Peanut Butter Rice Treats are about to become your new go-to snack or dessert. They’re chewy, chocolatey, perfectly sweet and best of all, they come together in just 10 minutes of prep time with simple pantry ingredients.

You get a satisfying crunch from the rice cereal, creamy richness from natural peanut butter, and just the right amount of sweetness from the maple syrup.

Ingredients 

  • 3 cups puffed rice cereal or crisp rice cereal
  • ¾ cup natural peanut butter (smooth)
  • ½ cup honey or maple syrup
  • ½ cup dark chocolate chips 
  • ½ teaspoon salt 

Step-by-Step Instructions

1. Prepare your pan-  Line an 8x8-inch baking dish with parchment paper. This makes it easy to lift out the treats for slicing.

2. Make the peanut butter mixture-  In a small saucepan over low heat, stir together the peanut butter and maple syrup (or honey) until smooth and fully combined. Avoid boiling gentle heat is key.

3. Mix with cereal - Place the rice cereal in a large mixing bowl. Pour the warm peanut butter mixture over top and stir until every piece is evenly coated.

4. Press into the pan- Transfer the mixture into your prepared baking dish. Use the back of a spoon or spatula to press it down firmly this helps the bars hold together once set.

5. Add the chocolate layer-  In a microwave-safe bowl, melt the dark chocolate chips in 20–30 second intervals, stirring in between until smooth. Spread evenly over the peanut butter layer.

6. Chill-  Refrigerate for at least 1 hour, or until the bars are firm.

7. Slice & enjoy-  Lift the block out of the pan using the parchment paper, then cut into 12 squares. Store in the fridge for up to a week.

Note - these treats are a little bit crumbly but sooo good! 

Dietitian Tips & Variations

  • Boost the protein: Mix in 1–2 scoops of your favourite protein powder into the peanut butter mixture before adding the cereal. You may need a splash more liquid sweetener to help bind.
  • Make it nut-free: Use sunflower seed butter or tahini instead of peanut butter for a school-safe snack.
  • Lower the sugar: Choose unsweetened dark chocolate chips and use a bit less honey/maple syrup.
  • Add crunch: Stir in chopped nuts, seeds, or shredded coconut for more texture.
