Peanut Butter Rice Crispy Squares

These no-bake peanut butter rice crispy squares are the perfect balance of sweet, chewy, and crunchy. Made with just a handful of wholesome ingredients, they’re a healthier twist on the classic treat you may remember from childhood.

Ingredients

  • 3 cups puffed rice cereal
  • ¾ cup natural peanut butter (smooth)
  • ½ cup honey or maple syrup
  • 1 teaspoon vanilla extract (optional)

Directions

  1. Prepare the pan: Line an 8x8-inch baking dish with parchment paper.
  2. Melt together: In a small saucepan over low heat, stir peanut butter and honey (or maple syrup) until smooth and well combined. Remove from heat and stir in vanilla, if using.
  3. Mix: Pour the peanut butter mixture over the rice cereal in a large bowl. Stir until all the cereal is evenly coated.
  4. Press into pan: Transfer the mixture to the prepared pan. Press down firmly with a spatula or the back of a spoon to create an even layer.
  5. Chill: Place in the fridge for 1 hour, or until firm and set.
  6. Cut & enjoy: Lift from the pan using the parchment paper and cut into 12 squares.

Storage Tips

  • Store in an airtight container in the fridge for up to 5 days.

Variations & Substitutions

  • Nut-free: Swap peanut butter for sunflower seed butter or soy nut butter.
  • Extra crunch: Mix in a few tablespoons of chia seeds, hemp hearts, or chopped nuts before pressing into the pan.
  • Chocolate drizzle: Melt dark chocolate and drizzle over the top before chilling.
