Ingredients You’ll Need

  • 2 ripe avocados
  • Juice of 1 lemon
  • 4 garlic cloves
  • ¼ cup olive oil
  • ¼ cup grated Parmesan cheese
  • 1 cup fresh spinach

  • 1 box pasta noodles (any kind)
  • ½ cup reserved pasta water
  • Optional: Roasted edamame or cooked chicken for added protein

How to Make Creamy Green Pasta Sauce

1. Cook the Pasta – Boil pasta according to package instructions. Before draining, reserve ½ cup of pasta water.

2. Blend the Sauce – In a food processor or blender, combine avocado, lemon juice, garlic, olive oil, Parmesan cheese, spinach, and basil. Blend until smooth.

3. Combine with Pasta – Toss the cooked pasta with the green sauce, adding reserved pasta water gradually until the desired creamy consistency is achieved.

For the Green Sauce:
  • 2 Avocados
  • 1 Lemon Juiced
  • 4 Garlic Cloves
  • ¼ cup Grated Parmesan cheese
  • 1 cup Spinach
  • ½ cup Fresh basil
Pasta
  • 1 box Pasta any kind you like
  • ½ cup Pasta water make sauce more creamy

  • Pot
  • Food processor
  • Measuring cups and spoons

Method
 

  1. Cook the Pasta – Boil your pasta according to package instructions. Before draining, reserve ½ cup of pasta water.
  2. Blend the Pesto – In a food processor or blender, combine avocado, lemon juice, garlic, olive oil, Parmesan cheese, spinach, and basil. Blend until smooth.
  3. Mix with Pasta – Add the pesto to the cooked pasta along with the reserved pasta water. Stir well to coat the pasta in a creamy sauce.
