Oven-Roasted Zucchini

Growing up Italian, zucchini was always on our table. It showed up in pastas, sides, sandwiches, you name it. This oven-roasted zucchini is one of the simplest ways to use it, and it’s still a go-to in my kitchen today.

Roasting zucchini in the oven brings out its natural sweetness. It’s perfect as a veggie side or stirred into pasta to bulk up the nutrition.

Ingredients

  • 4–5 medium zucchini, thinly sliced or chopped
  • Olive oil, for drizzling
  • Salt & black pepper, to taste
  • 1tsp Garlic powder
  • 1tsp Onion powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. Spread the zucchini out in a single layer (this helps with caramelization).
  4. Drizzle generously with olive oil and season with salt, pepper, garlic powder, and onion powder.
  5. Roast for 30–45 minutes, until zucchini is soft and lightly caramelized.

How to Use Roasted Zucchini

  • Serve as a simple vegetable side
  • Add to pasta dishes to boost volume and nutrition
  • Mix into grain bowls or salads
  • Layer into sandwiches or wraps
  • Toss with Parmesan or nutritional yeast right before serving

Tips for Best Results

  • Slice zucchini thin and evenly for better browning
  • Don’t overcrowd the pan — use two sheets if needed
  • Finish with a squeeze of lemon or fresh herbs for extra flavor
