One Pot Lasagna Soup

Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoon olive oil
  • 2 lb ground beef
  • 2 tablespoon tomato paste
  • 6 cups of chicken broth 
  • 4 cups tomato sauce
  • 1 tablespoon oregano
  • 1 tablespoon thyme
  • 1 tablespoon Italian seasoning
  • 1 tablespoon dried basil
  • Salt & pepper to taste
  • 1 box lasagna noodles, broken into small pieces
  • 1 cup milk of choice 
  • ½ cup cream (optional) 
  • 2 cups fresh spinach
  • Fresh basil or parsley for topping
  • Parmesan cheese for serving (optional)

Directions

1. Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add chopped onions and garlic, and sauté until the onions soften.

2. Brown the Beef: Add the ground beef to the pot and cook until browned.

3. Season & Add Tomato Base: Stir in the oregano, thyme, Italian seasoning, basil, salt, and pepper. Add the tomato paste, chicken broth, and canned tomato sauce. Stir well to combine.

4. Simmer & Cook the Noodles: Bring to a simmer, then add the broken lasagna noodles. Cook until the noodles are tender.

5. Add the Milk & Spinach: Pour in the milk and stir. Once combined, add the spinach and let it wilt.

6. Finish & Serve: Once the spinach is cooked, your soup is ready! Serve topped with fresh basil, parsley, and a sprinkle of Parmesan cheese if desired.

Storage

  • Fridge: Store in an airtight container for up to 5 days.
  • Freezer: Freeze for up to 3 months. Reheat on the stove with a splash of broth or sauce. 
  • Reheating Tip: Add extra broth when reheating to adjust consistency.

What’s the best way to store leftovers?

Store in an airtight container in the fridge or freezer for later.

Can I make this in a slow cooker?

Yes! Brown the beef and onions first, then add everything (except milk and spinach) to the slow cooker and cook on low for 6-8 hours. Stir in milk and spinach before serving.
