If you’re looking for a quick and healthy dessert that satisfies your sweet tooth, you’ll love this date bark recipe. It’s made with just a few simple ingredients: dates, chocolate, nuts, and sea salt and it delivers the perfect mix of chewy, crunchy, salty, and sweet. 

Best of all, it’s naturally sweetened (thanks to the dates), no-bake, and takes less than 10 minutes to prep.

This treat is perfect to keep in the fridge or freezer for whenever you want a little something after dinner or an energizing afternoon snack.

Ingredients

Here’s what you’ll need:

  • 50 dates (pitted) – the chewy, naturally sweet base.
  • ½ cup dark chocolate chips – melted
  • ⅓ cup slivered almonds – or any nut of choice (walnuts, pistachios, pecans, cashews).
  • ½ teaspoon sea salt – to balance the sweetness and add a little crunch.

How to Make Date Bark

1. Prepare the base: Line a baking sheet with parchment paper. Place the dates evenly on top.

2. Flatten: Add another sheet of parchment paper on top of the dates. Use a rolling pin to flatten them into a single, even layer.

3. Add the chocolate: Melt the chocolate chips (microwave in 30-second intervals or use a double boiler). Spread the melted chocolate evenly over the flattened dates.

4. Top it off: Sprinkle slivered almonds (or your chosen nut) on top, then finish with sea salt.

5. Freeze: Place the tray in the freezer for about 2 hours, or until completely hardened.

6. Break and enjoy: Remove from the freezer, peel off the parchment, and break into bite-sized pieces with your hands.

    Storage

    • Fridge: Store in an airtight container for up to 2 weeks.
    • Freezer: Keep in a freezer-safe container for up to 3 months.

    • Nut-free: Use pumpkin seeds or sunflower seeds instead.
    • Extra crunch: Add crushed pretzels or granola on top.
    • Add more flavour: Drizzle with peanut butter or almond butter before freezing.

    Can I use Medjool dates?

    Yes! Medjool dates are soft and naturally caramel-like, making them perfect for this recipe. They are larger so you may not need to use as many. 

    What chocolate works best?

    Dark chocolate balances the sweetness of the dates, but milk or white chocolate works too.

    Do I have to freeze it?

    Freezing helps the bark harden into pieces. You can refrigerate it instead, but it may stay softer.
