Carrot Ribbon Salad

If you're looking for a quick and healthy side dish this carrot ribbon salad is it. Made with just a few pantry staples and fresh carrots, it's light, crunchy, and full of flavour.

As a dietitian I am all for salads like this to get in more veggies and as someone who doesn't love the taste of raw carrots this is a great way to change up the flavour and texture!

Ingredients

  • 5 medium carrots, peeled into ribbons
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon minced
  • 1 teaspoon grated ginger or minced
  • 1 tablespoon sesame seeds (optional)

Step-by-Step Instructions

  1. Make carrot ribbons: Use a vegetable peeler to shave the carrots into long, thin ribbons directly into a large mixing bowl.
  2. Add dressing ingredients: Add sesame oil, soy sauce, olive oil, garlic, and ginger right into the same bowl with the carrots.
  3. Toss everything together: Gently mix until the carrot ribbons are evenly coated in the dressing.
  4. Finish and serve: Sprinkle with sesame seeds, toss once more, and enjoy!

Storage Tips

Store leftovers in an airtight container in the fridge for up to 2 days. The carrots may soften slightly.

Yes, though it’s best within a few hours. If making ahead, keep the dressing separate and toss just before serving.

You can, but the texture will be different.
