Banana Muffins (2 Bananas)

There’s nothing quite like the smell of freshly baked banana muffins coming out of the oven. This recipe has been a staple in my family for years, and it’s one I keep coming back to. 

What makes it special is that these banana muffins (2 bananas) have no sugar added the sweetness comes naturally from extra ripe bananas and chocolate chips.

Ingredients

Here’s what you’ll need:

  • 2 large very ripe bananas – the darker and spottier, the better! They add natural sweetness and moisture.
  • 1 egg
  • 2 teaspoons vanilla extract (optional)
  • ⅓ cup avocado oil
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 ½ cups flour
  • ⅓ cup chocolate chips (optional)

Step-by-Step Instructions

1. Preheat oven: Preheat your oven to 350°F (175°C). Line or grease a muffin tin.

2. Mash bananas: In a large bowl, mash the bananas until smooth.

3. Mix wet ingredients: Add the egg, vanilla, and avocado oil. Stir until combined.

4. Add dry ingredients: Mix in the baking soda, baking powder, and flour. Stir gently until just combined don’t over mix.

5. Add chocolate chips: Fold in the chocolate chips if using.

6. Bake: Divide the batter into the muffin tin and bake for 15-18 minutes, or until a toothpick comes out clean.

7. Cool & enjoy: Let cool slightly before removing from the tin.

    Tips for the Best Banana Muffins

    • Use very ripe bananas with plenty of brown spots for maximum sweetness.
    • Don’t over mix the batter—this keeps the muffins soft and fluffy.

    Storage

    • Room temperature: Store in an airtight container for up to 3 days.
    • Freezer: Freeze for up to 2 months. Just thaw or warm in the microwave when ready to enjoy.

    Can I make these muffins gluten-free?

    Yes, simply swap in a 1:1 gluten-free baking flour blend.

    Do I have to add chocolate chips?

    Nope! The muffins are delicious as-is, but the chocolate makes them extra tasty.

    Are these muffins sweet enough without sugar?

    Yes—ripe bananas add plenty of natural sweetness, especially when they’re very spotty and soft.
