Apple Oatmeal Muffins

If you're looking for a nourishing muffin that's quick to prep and great for grab-and-go mornings, these apple oatmeal muffins are a perfect option. 

Enjoy them on their own or with greek yogurt and a glass of milk for a balanced breakfast.

What Makes Them a Smart Choice

These muffins contain a combination of oats, fruit, and healthy fats. They offer:

  • About 3 grams of protein per muffin, which you can boost by adding a protein-rich side like yogurt or a glass of milk
  • No refined sugar, as they’re sweetened naturally with maple syrup and applesauce
  • Healthy fats from avocado oil

Apple Oatmeal Muffins

Ingredients

  • 3 cups quick oats
  • 2 tablespoons cinnamon
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1½ cups milk of choice
  • 2 eggs
  • ½ cup unsweetened applesauce
  • ¼ cup avocado oil
  • ¼ cup maple syrup
  • 2 apples, diced with skin left on
  • 1 teaspoon vanilla extract

Instructions

1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or light oil

2. Dice the apples, keeping the skin on for extra fibre and texture

3. In a large mixing bowl, combine the oats, cinnamon, baking powder, and salt

4. In a separate bowl, whisk together the milk, eggs, applesauce, avocado oil, maple syrup, and vanilla

5. Pour the wet mixture into the dry ingredients and stir until just combined

6. Gently fold in the diced apples

7. Divide the batter evenly into 12 muffin cups

8. Bake for 35 to 40 minutes or until a knife inserted in the centre comes out clean

9. Allow to cool slightly before serving

Storage Tips

Store in an airtight container at room temperature for up to three days or refrigerate for up to five days. You can also freeze the muffins for longer storage and reheat as needed in the microwave or toaster oven.

  • Egg-free option - Use two flax eggs in place of the regular eggs

FAQ's: Apple Oatmeal Muffins

Are these muffins high in fibre?

They contain fibre mainly from the oats and apples. While not considered a high-fibre muffin, they still contribute to your daily fibre intake.

Can I use rolled oats instead of quick oats?

Yes, but the texture will be a little heartier. You can pulse rolled oats in a blender a few times if you want them finer.

How can I turn this into a complete breakfast?

Pair one or two muffins with Greek yogurt and a glass of milk for a balanced meal with more protein and staying power.
