Air Fryer Zucchini Fritters

If you’ve got a few extra zucchinis on hand, these air fryer zucchini fritters are the perfect way to use them up! They’re easy to make, packed with flavour, and a fun veggie-forward snack or side dish the whole family will love.

Whether you toss them in the air fryer or pan-fry them until golden and crispy, these fritters make a great appetizer, school lunch add-on, or movie-night snack with your favourite dip.

Ingredients for air fryer zucchini fritters

  • 4 medium zucchinis, grated and pressed to remove excess water
  • 2 eggs
  • 1 cup grated Parmesan cheese
  • 1 tablespoon onion powder
  • 1 tbsp  garlic powder
  • 1 cup whole wheat flour or white flour

Directions for air fryer zucchini fritters

  1. Prep the zucchini: Grate the zucchinis and place them in a clean kitchen towel/paper towel or cheese cloth. Press firmly to squeeze out as much moisture as possible — this helps the fritters get crispy.
  2. Mix the batter: In a large bowl, combine the grated zucchini, eggs, parmesan cheese, flour, and seasonings. Stir until well mixed.
  3. Form the fritters: Scoop about 2 tablespoons of the mixture and form into small patties or bite-sized rounds.
  4. Cook them up:
    • Air fryer method: Lightly spray your air fryer basket with oil. Arrange the fritters in a single layer and air fry at 400°F (200°C) for 12–15 minutes, flipping halfway through until golden brown.
    • Stovetop method: Heat a bit of avocado oil in a non-stick pan over medium heat. Fry fritters for 2–3 minutes per side until crispy and golden.
  5. Serve and enjoy: Serve warm with your favourite dipping sauce — think Greek yogurt dip, marinara, or a creamy garlic aioli.

Tips for Perfect Zucchini Fritters

  • Make sure to remove as much water as possible from the zucchini — this is key for crispy results.
  • Add extra flavour with fresh herbs like parsley or basil, or a pinch of chili flakes for heat.

How to Serve Zucchini Fritters

Zucchini fritters are super versatile! Try serving them:

  • As a side dish with grilled chicken or fish
  • Topped with poached eggs for breakfast
  • With a dollop of Greek yogurt or tzatziki

Storage

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the air fryer or oven until crisp. To freeze, place cooled fritters in a single layer on a baking sheet, freeze until solid, then transfer to a freezer bag.
